salt

olive oil

nutritional yeast

teaspoon
dried basil, oregano, parsley or Italian seasoning
(optional)
Instructions
Remove any excess liquid from the tofu and crumble it into small pieces. Place the tofu in a food processor and add all the remaining ingredients.
Process until the mixture is smooth and creamy, pausing to scrape down the sides of the food processor when necessary.
Optionally, transfer to a ricotta mold and let it set in the fridge for some time or skip this step and serve immediately.
Notes
If the ricotta is too thick, you can add 1-2 tablespoons of plant milk or water as needed to reach the right consistency.
