Quick and Easy Vegan Tofu Ricotta

Ingredients
  

  • 14 oz. firm tofu 400 g
  • 1-2 cloves garlic
  • Juice from ½ small lemon
  • ½ teaspoon salt or to taste
  • tablespoons olive oil
  • tablespoons nutritional yeast
  • 1 teaspoon dried basil, oregano, parsley or Italian seasoning (optional)

Instructions
 

  • Remove any excess liquid from the tofu and crumble it into small pieces. Place the tofu in a food processor and add all the remaining ingredients.
  • Process until the mixture is smooth and creamy, pausing to scrape down the sides of the food processor when necessary.
  • Optionally, transfer to a ricotta mold and let it set in the fridge for some time or skip this step and serve immediately.

Notes

If the ricotta is too thick, you can add 1-2 tablespoons of plant milk or water as needed to reach the right consistency.
